- 1 can of black beans (drained)
- Package of frozen white "shoe peg" corn (baby). If not thawed it'll just be a little wet on the bottom
- Chop a red pepper (and green too if you want)
- 1/3 cup chopped cilantro
- 1/4 cup olive or veg oil
- 1/3 cup apple cider vinegar
- 2 tsp Cumin
- Sprinkle garlic powder
- Salt and pepper to taste
