Pork Dumplings

INGREDIENTS
- 1 lb Boneless Pork
- 2 oz Rice Bean Threads
- Dumpling or Dim Sum rolling sheets
- 1 Tbsp Mushroom Seasoning
- 2 Tbsp Corn Starch
- ½ lb Fresh Shrimp
- 1 Tbsp Onion Powder
- ½ Tbsp Minced Garlic
- ¼ Cup chopped Scallion
- 1/8 Cup minced Fresh Parsley
- ½ Tsp Black Pepper
- 2 Eggs
- ½ Tbsp diced Ginger
- 2 Tbsp Sesame Oil
- 1 large sweet onion
DIRECTIONS
- Soak rice bean threads in cold water, submerged for 1 hour
- Chop scallion, dice ginger, cut sweet onion
- Clean and cut excess fat from pork. Cut pork into small pieces (1/4” each). Grind meat in a food processor until fine. Set to aside.
- Grind shrimp until fine using the food processor. Set to aside
- Grind sweet onion in a food processor until fine. Set to aside.
- Drain rice bean threads. Squeeze bean threads to rid of excess water. Set to aside.
- Using a large mixing bowl, add ground pork, ground shrimp, chopped sweet onion, corn starch, onion powder, chopped scallion, black pepper, diced ginger, mushroom seasoning, minced garlic, minced parsley, 2 eggs, sesame oil, rice bean threads. Mix all ingredients together.
- Using dumpling maker (4 inches/10cm), cut dumpling or dim sum sheets using the sharp end.
- Add a table spoon of dumpling filling from Step 7 onto dumpling sheet. Fold dumpling maker together and squeeze to make the dumplings. Repeat step to make the dumplings using the rest of the filling
- Steam the dumplings using a dim sum steamer for 6-8 min on high heat. Remove steamed pork dumplings and ready to serve.
- For pan fried pork dumplings, bring 2 Tbsp vegetable oil to hot in a non-stick frying pan over medium heat. Add the pork dumplings. Cook for approximate 1-2 min on each side or until golden brown. Remove dumplings from heat to cool for 5 min. Ready to serve.
DUMPLING SAUCE
- Mix 4 oz dipping sauce (Gyoza) with ½ tbsp sesame oil, chili hot oil pepper, scallion, ½ tbsp rice vinegar, ½ tsp sugar.
