Mini Star Fruit Tarts

TOTAL COOKING TIME: 10 minutes
INGREDIENTS
  • 1 package frozen puff pastry (2 sheets)
  • 1 (8 oz.) package cream cheese
  • 1/4 cup confectioners sugar
  • 1/2 cup apricot preserves
  • 1/2 cup raspberry preserves
DIRECTIONS
  • Thaw puff pastry according to package directions.
  • Preheat oven to 400 degrees.
  • Lightly flour surface and roll each pastry sheet into a 15x10 inch rectangle. Cut with a 2-3 inch star cookie cutter.
  • Press pastry stars into muffin cups.
  • Combine cream chees and confectioners sugar until smooth. Place 1 tsp of mixture in the center of each tart.
  • Bake 12-15 minutes or until golden brown. Cool and remove from pan. Top each tart with 1 tsp of preserves.
