Lemon Sponge Pudding

PREP TIME: 15 minutes
SERVES: 5
TOTAL COOKING TIME: 55 minutes
INGREDIENTS
  • 2/3 cup sugar
  • 3 tbsp all-purpose flour
  • 1 tsp grated lemon rind
  • 1 cup 2% low-fat milk
  • 1/4 cup lemon juice
  • 2 egg yolks, lightly beaten
  • 2 egg whites
DIRECTIONS
  • Preheat oven to 325 degrees.
  • Combine first 6 ingredients in a bowl; stir with a wire whisk
  • Beat egg whites (at room temperature) at high speed of an electric mixer until stiff peaks form. Gently fold egg whites into milk mixture.
  • Pour mixture into a 1-quart baking dish; place in a large, shallow pan. Add hot water to larger pan to a depth of 1 inch.
  • Bake for 55 minutes or until golden.
  • Remove dish from water; let stand 10 minutes and serve.
