Mini Apple Hand Pies

INGREDIENTS
  • 2 large apples
  • 2 Tbsp butter
  • ¼ cup light brown sugar, packed
  • 2 tsp cinnamon
  • Juice of ½ lemon
  • ½ tsp cornstarch mixed with 1 Tbsp water
  • Puff Pastry or Pie Dough, 2 sheets
  • 1 large egg
  • ½ cup granulated sugar
  • 1 tsp cinnamon
DIRECTIONS
  • Thaw puff pastry or pie dough
  • In saucepan over medium heat, melt butter
  • Mix in the apples, brown sugar, cinnamon and lemon juice. Heat for 10 minutes or until the apples are tender.
  • Mix cornstarch and water and pour into apple filling. Stir until filling thickens. Remove from heat and allow the filling to cool
  • Preheat oven to 400 degrees
  • Line large baking sheet with parchment paper. Lightly dust surface with flour and unroll puff pastry.
  • Use a rolling pin to smooth surface and extend size. Using cutter/crimper, cut pie rounds.
  • Place apple filling on half of the rounds keeping ¼ border on sides. Score tops of remaining pie rounds with 4 slices.
  • Place top on filling and crimp sides with cutter/crimper or a fork
  • Beat the egg with 2 tsp water, and brush borders and tops of pies.
  • In small dish, mix cinnamon and sugar. Sprinkle over tops of pies.
  • Bake for 12-14 minutes. Cool for 5 minutes on baking sheet and then transfer to cooling rack.
