Mini Apple Hand Pies

INGREDIENTS
- 2 large apples
- 2 Tbsp butter
- ¼ cup light brown sugar, packed
- 2 tsp cinnamon
- Juice of ½ lemon
- ½ tsp cornstarch mixed with 1 Tbsp water
- Puff Pastry or Pie Dough, 2 sheets
- 1 large egg
- ½ cup granulated sugar
- 1 tsp cinnamon
DIRECTIONS
- Thaw puff pastry or pie dough
- In saucepan over medium heat, melt butter
- Mix in the apples, brown sugar, cinnamon and lemon juice. Heat for 10 minutes or until the apples are tender.
- Mix cornstarch and water and pour into apple filling. Stir until filling thickens. Remove from heat and allow the filling to cool
- Preheat oven to 400 degrees
- Line large baking sheet with parchment paper. Lightly dust surface with flour and unroll puff pastry.
- Use a rolling pin to smooth surface and extend size. Using cutter/crimper, cut pie rounds.
- Place apple filling on half of the rounds keeping ¼ border on sides. Score tops of remaining pie rounds with 4 slices.
- Place top on filling and crimp sides with cutter/crimper or a fork
- Beat the egg with 2 tsp water, and brush borders and tops of pies.
- In small dish, mix cinnamon and sugar. Sprinkle over tops of pies.
- Bake for 12-14 minutes. Cool for 5 minutes on baking sheet and then transfer to cooling rack.
