CREAMY CHICKEN AND BROCCOLI

INGREDIENTS
- 6 boneless chicken breasts
- 32 oz. frozen broccoli
- 1 tbsp olive oil
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp diced garlic, divided
- 1 tbsp mushroom seasoning
- 1 cup mayonnaise
- 1 can (16 oz.) golden cream of mushroom
- 1 can (16 oz.) cream of chicken
- Italian seasoned breadcrums
- 2 cans (8 oz.) sliced mushrooms
- ½ tsp black pepper
- Parmigiani cheese, shaker
DIRECTIONS
- Thaw frozen broccoli at least 24 hours prior to cooking. Place broccoli on a strainer and let it drain. Before cooking, use paper towels to suck up any excess water.
- Preheat oven to 350 degrees.
- Clean chicken breasts in cold water. Cut chicken into 1 to 1.5 inch pieces.
- Place chicken into a large mixing bowl. Add onion powder, garlic powder, mushroom seasoning and 1 tsp diced garlic. Mix well to marinade for 30 minutes. Set aside.
- Using a mixing bowl, mix mayonnaise, cream of mushroom, cream of chicken, diced garlic, black pepper. Set aside.
- Using a deep cooking pan, place broccoli, sliced mushrooms and spread them on pan. Scatter marinated chicken and spread over the broccoli. Scatter parmigiani cheese and breadcrumb on top layer of pan.
- Cook chicken in oven for 1 hour at 350 degrees. Serve Creamy Chicken and Broccoli over cooked white rice with scallion and soy sauce (as needed)
