Barbara's Hassleback Potatoes

PREP TIME: 15 minutes
SERVES: 4
TOTAL COOKING TIME: 45 minutes
INGREDIENTS
  • 4 small baking potatoes
  • 1/2 tsp garlic or fresh garlic clove
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 sprigs rosemary, chopped
  • 2 tbsp olive oil
DIRECTIONS
  • Preheat oven to 425 degrees.
  • Peel potatoes. Slice bottom of potatoes so they stand without rolling. Cut each potato not quite through in a series of crosswise slices about 1/4-inch apart or closer so that they are still joined together at the bottom.
  • Sprinkle with garlic, salt, pepper and rosemary.
  • Drizzle with olive oil.
  • Bake for 45 minutes or until tender.
  • Optional: sprinkle with Parmesan cheese when cooked
